Bianco

Bianco, translated "white" from Italian, derives its name from the lack of tomatoes in the dish - something quite uncommon in Corfu where this red fruit grows in abundance!

Bianco is a delicious way to cook fish - typically cod - in a garlic and lemon sauce, with potatoes and heaps of parsley and black pepper.

Pstitsada

Pastitsada is Corfu's most famous traditional dish, and is made with either cockerel or veal. It is most often served on holidays, official dinners or simply on Sunday!

The meat is browned with onion, garlic and deglazed with red wine. It is then left to simmer with tomatoes, cinammon, bay leaf and nutmeg until the meat falls off the bone!

Remember - if the aforementioned spices are not included in the recipe you find, then it is not Pastitsada!

Sofrito

Sofrito is another one of Corfu's staple traditional dishes, and you will find it is available to try in most -if not all- Corfiot restaurants.

It is made with thin slices of veal which have been dipped in flour and lightly fried. It is then cooked with three elements essential to create the Sofrito; plenty of parsley, garlic and white wine vinegar(or simply white wine). It is then served with rice or potatoes.
